Villa Pillo Extra Virgin Olive Oil is produced at John Dyson’s Tuscan estate, Villa Pillo. The olives are handpicked early in the season in order to retain their fruitiness and low acidity. The freshly harvested olives are then immediately milled and cold-pressed. This oil is unfiltered in order to maximize its flavor. A slightly cloudy tint is entirely natural, and of course, we use no preservatives of any kind. In order to fully savor the delicate aromas and flavors of our olive oil, we recommend using it uncooked on salads, cooked vegetables, bruschetta, or even drizzled into soup just before serving.
